Red Pepper & Onion Brussels Sprouts

I am a huge fan of brussels sprouts and attempt to eat them with every meal that I can. Unfortunately my family does not share my enthusiasm for these little balls of cabbage so I am constantly trying out new ways to make them tasty. I love red pepper and purple onions just as much as I love brussels sprouts and the other night it made sense just to combine them all together and see what happened. The result was AH-MAZING. I have never cooked brussels sprouts with so much flavor until now. The recipe is pretty straight forward and easy to comprehend. Enjoy!

Red Pepper & Onion Brussels Sprouts (serves 4)

Prep Time: 5 min.

Cook Time: 30 min.

Ingredients:

  • Two handfuls of brussels sprouts

  • 1/2 red pepper

  • 1/3 purple onion

  • seasonings: salt, pepper, goya

  • garlic

  • olive oil

Set your oven to 400 degrees. While warming, dice your pepper, onion, and garlic. Toss brussels sprouts lightly in olive oil and place in an oven safe dish. Dash with seasonings and cover with pepper, onion, and garlic. Give a nice shake so everything is equally mixed. Cover pan with aluminum foil and bake for 30 minutes. Once finished, allow your pan to cool for about 10 minutes by lifting one side of the aluminum foil so your brussels sprouts can "breathe".
