Yummy Black Bean Burgers

I have seen black bean burgers for years...and would keep it moving. As great as they looked, I did not understand how bean burgers could be tasty until I actually had one. The first time I tried a black bean burger was at the Atlanta Zoo. Food and animals do not really mix for me but their restaurant was surprisingly good. I bit into it and my mouth exploded. I could not believe how good it was! Not to mention, their burger had very few additives so all I could think about was how I could make one that tasted even better. This has been a family favorite for years. I hope you enjoy it.
Yummy Black Bean Burgers (serves 5)
Prep Time: 20 min.
Cook Time: 12 min.
Ingredients:
1 (15 ounce) can black beans
1/2 red pepper
1/2 green pepper
1/2 purple onion
1 handful shredded spinach
1 egg
1/3 cup ground oatmeal
1/4 cup shredded chedder cheese
2 tablespoons parmesan cheese
seasonings: salt, pepper, coriander, and thyme
Olive oil
Drain your can of black beans and empty them in a medium sized mixing bowl. Hand press your beans until they are completely mushed. Dice your red pepper, green pepper, and purple onion, adding it to your mixture. Combine spinach, egg, chedder and parmesan cheese, and seasonings to your bowl. Mix.
To ground your oatmeal- Place oatmeal in your blender and pulsate on high for 10 seconds. I use the ground oatmeal as a white flour replacement. You can use flour if you want to.
Combine ground oatmeal to your mixture and form patties. Place patties in a pan containing a light layer of olive oil and fry on each side for 6 minutes.
These are great served on a bun with barbeque sauce or you can keep it traditional and serve with ketchup and mustard. I would love to hear how your burgers turned out. Feel free to share below!
