Cauliflower Grits

Cauliflower grits are a new twist on an old classic. As a Southern, grits are one of my favorite breakfast (lunch and dinner) foods. On my journey to be more healthy, I have found many ways to still enjoy some of my favorite meals with a healthy twist.

While grits are not necessarily considered to be unhealthy, they are made from hominy which are small ground chips of dried corn. And as you may know, corn is now almost completely a GMO based food so you can understand why a person would want to make the switch to a healthy alternative.

Give these yummy Cauliflower Grits a try!

Cauliflower Grits:

Prep Time: 15 min

Cook Time: 10 min

Ingredients:

  • One medium head of cauliflower

  • 2 cups broth (chicken, beef, or vegetable)

  • 1/2 cup almond milk

  • 1 tablespoon butter

  • pinch of salt and pepper

  • 2 tablespoon cheese (parmesan, chedder, or both)

Clean the cauliflower and chop into moderate chunks. Run your chopped cauliflower through a food processor. If you do not have a food processor use a blender. Blend your cauliflower until it resembles a grit like texture.

Bring to a boil your broth and add in cauliflower. Boil until water is mostly evaporated (about 10 minutes). Add your milk, salt and pepper, cheese, and butter and stir until well blended.
