Easy Veggie Fried Rice

We live about five minutes from my favorite Chinese restaurant so it is a weekly ritual to visit at least once a week (at minimum). After spending entirely too much money on their yummy veggie fried rice, I finally decided to just make my own. This meal is super quick and easy to do and kid approved. I stuff in tons of veggies and it is cooked and devoured within 45 minutes. Feel free to add your own veggies but for the sake of this recipe, I will share the ones I use with you here:

Easy Veggie Fried Rice:

Prep Time: 10 minutes

Cook Time: 30 minutes

Ingredients:

  • 2 cups cooked jasmine rice

  • 1/3 red pepper

  • 1/2 purple onion

  • 8 stalks asparagus (diced)

  • 1 half zucchini diced

  • 2 boiled eggs (diced)

  • 3 tablespoons soy sauce

  • pinch salt and pepper

  • 2 tablespoons butter

While cooking your jasmine rice and boiling your eggs, prep your vegetables by chopping and dicing them. Melt butter in a large skillet or wok and saute vegetables (about 10 minutes) while adding in one tablespoon of soy sauce.

Once your rice is cooked and eggs are boiled, add in your rice. Add your two additional tablespoons of soy sauce.

Stir in rice, vegetables, and soy sauce. Cook over medium high heat for 10 minutes, allowing bottom to brown and fry before stirring. Enjoy!
