Yummy Banana Pancakes

Every now and again, I wake up in the morning with the urge to be creative at breakfast time. We are pretty slow risers so sometimes we don't make it out of bed until close to 10:30am. So it may be better to call this a brunch instead of an actual breakfast. Hey, don't judge me. At least I was honest. Anyhow...I've had my eye on a few banana pancake recipes but true to form, I had to remix it a bit to create my own bit of yummy food heaven.
So I woke up this morning/afternoon and got to work making what Kamryn has now labeled- "Nana Cakes". I'll take it. Of course I didn't have everything I needed so this quick 30 minute breakfast quickly turned into an hour long situation as I had to walk to the store and grab a couple of necessary ingredients. As you can see, I was a little short on toppings but you can add some additional ones that you enjoy. May I suggest blueberries or walnuts? Oh yes! So get to it! Yummy Banana Pancakes
Ingredients:
Serving: Makes 8 pancakes
Time: 30 minutes
15 minutes prep
15 minutes to cook
2 overly riped bananas
1 cup flour
1 cup milk
2 teaspoons baking powder
1 tablespoon cinnamon
1 tablespoon vanilla extract
1 egg
2 teaspoons of olive oil
Toppings (optional):
Chopped fruit
Nuts (walnuts, pecans, or almonds)
Syrup
Whipped Cream
In a bowl, start by mashing your bananas in a bowl. The more ripe the bananas, the better because this is going to contribute to majority of your sweetness. If you have little ones, this is the fun part to let the participate in. Wash their hands and let them mash away or use a fork and press into the bananas. Once your bananas have a lumpy but smooth consistency, mix in your olive oil, egg, vanilla extract, and milk. Mix and set to the side.
In a separate bowl, combine flour, baking powder, and cinnamon. Once mixed, combine mixture with the other bowl and stir until you have a batter like consistency.

Now that you have created your batter, warm a skillet lightly drizzled in olive oil (or preferred cooking oil) over medium heat until hot. Pour your pancake batter on the pan to make your banana pancakes. They cook a little quicker than traditional pancakes so watch them! Flip them occasionally, cooking each side about 5-7 minutes at first then flipping so not to burn until your pancakes reach your desired level of thickness.
I chopped a few strawberries, drizzled lightly with syrup and added some whipped cream and viola! We created yummy banana pancakes! Enjoy!
