Ok, so let me just start by saying this- do not look at this picture and judge my donuts. They were actually pretty tasty but because I did not have a donut pan and decided not to use a glaze, they look like this. Now that that is out of the way, let me tell you about these awesome little treats. Today was National Donut Day and to celebrate, I treated my little one to her own customized bite size donuts. I had to rig my little muffin pan to get the hole in the middle but you will see that a little later. If you want to do a glaze or sprinkle sugar on top, go ahead! But mama, I promise, these are perfect just the way they are. I would love to hear how these turn out for you if you decide to make them for your family. Enjoy!

 

Oatmeal Banana Donuts

Prep Time: 30 minutes

Ingredients:

- 1/2 Cup Gluten Free Flour

-1/2 Cup Ground Oatmeal

-1/4 Teaspoon Baking Soda

-1 1/2 Teaspoon Baking Powder

- 1/4 Teaspoon Cinnamon

- 3 Mashed Bananas

- 1/4 Teaspoon Vanilla

- 2 Eggs

- 2 Teaspoons of Milk

Pre-heat oven to 350 degrees. In one bowl, combine all dry ingredients. In a separate bowl mix all wet ingredients until smooth. Combine ingredients together in one bowl.

If you have a donut pan, simply pour your batter 3/4 of the way up and you are done. If you are like me and are ill prepared, you want to rig your muffin pan to accommodate your donuts. Below is a photo of how I made my donut "holes".

I used rolled aluminium foil and stuck it in the middle of my mixture. Yes, it's ugly but it is what it is. Place your pan in the oven and bake for 14 minutes. Stick a toothpick in your donut to make sure it is dry on the inside.

So this was my end result! I'll be honest with you, this tastes more like Banana bread shaped like donuts than anything. I can see the benefit of the sprinkled sugar but that is up to you if you want to add it. Enjoy!
